Garlic in any way, shape or form

We lived in Gilroy, California ( the "Garlic Capital of the World") for five years and learned to enjoy fresh garlic prepared many different ways. Garlic is good for the heart, the emotional state, and just plain delicious added to many recipes. And fresh garlic doesn't stay on the breath as much as does garlic powder or  garlic salt.

Here's a dinner idea for the vegan or vegetarian in the audience-- Roasted Garlic spread on baked potatoes, with steamed broccoli sprinkled with sesame seeds.


Roasted Garlic
Ingredients:
2 whole heads fresh garlic, unpeeled
¼ teaspoon salt
3 tablespoons olive oil

Directions:
Preheat oven to 425 degrees. Cut ¼ - ½ inch off the pointed ends of the garlic heads, enough to expose the garlic cloves. Put the heads of garlic in a custard cup or ramekin. Pour the olive oil on the open ends of garlic and sprinkle with salt. Cover and cook in 425 degree oven for about forty-five minutes, the same time it takes to bake a large potato.

Squeeze soft garlic over roast meat, baked potatoes or bread. Serves 4.

Serving suggestion: For a complete but easy dinner, cook the garlic and baking potatoes at the same time; serve with grated cheese and steamed broccoli for toppings.

    1. Em, You must have been to the Gilroy Garlic Festival, because they do serve garlic in ice cream there. As I remember, it gives a bite to the flavor, more of a tang than a garlic flavor.

  4. I visited Gilroy one very hot day during their Garlic Festival a few years ago. Everything I tasted was wonderful.

    A meal without some garlic is like a day without sunshine.

  9. We're to the south of Gilroy, but I often see the trucks, their entire beds full of garlic, stopping by at the truck stop here. At our house, we eat garlic most days and we love it. Your recipe sounds great and I will make it.

    As an asides, I'm writing about a wonderful Utah experience in my post today. You may enjoy it.

  12. I spent my teen years in Gilroy. We hung the steak outside before we bar-b-qued it! You should see that place today. It's not a cow town anymore, but a bedroom community for San Jose.

  14. To this day roasted garlic is a regular part of family dinners. I love garlic...not much more needs to be said.

    I love your extra suggestion for vegans/vegetarians.

  15. I like garlic, especially with green beans or garlic bread. I like a lot of foods that require me to carry around Altoids. :)

  18. I am really surprised by all these comments by garlic-lovers!! Not sure why I should be surprised, because the Gilroy Garlic Festival is one of the largest festivals of any kind in the world. Yay for garlic!
