Noodles

Noodles are the only pasta I've ever tried making. It's fairly simple to do and doesn't require any special equipment. My favorite way to use them is in Flu-busting Chicken Soup. To make a really spectacular meal, try Eggplant Casserole with these noodles.


Homemade Egg Noodles

A hearty addition to homemade chicken soup and one of the easiest pastas to make, these noodles can be served anywhere you would use noodles or pasta.

Ingredients:
4 eggs
2 teaspoons oil
3 tablespoons water
2 2/3 cups flour
1 teaspoon salt

Directions:
Mix all ingredients together in order given. Let stand ten minutes. Roll out to 1/16 inch thin on well- floured surface. Sprinkle flour on top of dough as needed; dough shouldn’t be sticky. Using a pizza cutter, cut into one-half inch wide strips. Let dry on wire racks about two hours or longer. Cook in boiling, salted water as you would any pasta.

Or you can toss them into soup without drying first. Add noodles to soup ten minutes before soup is ready to be served. (Make sure soup has come to a boil before adding noodles.) Stir noodles while adding and for a couple of minutes afterward to prevent them sticking together.

  2. Ah, the days when all pasta was called noodles, and even the noodles were home-made....
    Basic noodles with basic butter or cream still beats all, IMO.

    1. Mirka, I actually remember when the word "pasta" became this trendy thing. It happened in the 80's. And you had to pronounce it Pah-sta. Unlike the way I said it with my Midwestern accent.

  6. homemade noodles/pasta is the best. My Italian grandmother always made past from scratch... So amazing. Talk about light and airy. Never heavy like the boxed stuff...

  10. I like the skinny noodles (like in chow mein). Never have made them. I do make a mean chicken soup.

    BTW, Karen, I tried your Maine Muffin recipe and it's great! See my comment on yesterday's post. We grated the apple and hubs grated coconut he had toasted from scratch.

    That recipe book of yours is going to be a winner, I'd bet.

I'm getting very excited to see its publication, if nothing more than I'll have our favorite family recipes in a nice illustrated book so when the kids say, "Mom, how do I make the homemade noodles?" I'll say get your cook book and follow the recipe LOL.

  13. I'm impressed that you make your own noodles. I'm still learning how to cook storebought noodles without making them too hard or soft, because I'm still learning the basic cooking skills.

  16. My girlfriend's mother used to make her own noodles. I loved going over when she did. We rarely even had noodles, much less homemade ones.
