Yesterday's Dinner

If you've been following along my journey this month, you may have the idea that I put out a feast every night of the week for my family. No, not really. Although I do follow the "rule of three" because it gives a sense of satisfaction, even for a light meal.

Usually I cook 3 or 4 times a week, and the other nights we have leftovers, most often disguised. Yesterday's dinner might show up the next night as a casserole combined with something new, like a can of cream of mushroom soup LOL and then baked in the oven.

What's your favorite way of serving yesterday's dinner?

  2. I'm lazy about yesterday's dinner! Often when we have leftovers they become lunch for my husband or myself. Or they become part of our weekly "scrounge night." It's my way of getting the fridge ready to receive a new load of groceries on Monday!

  3. Cream of mushroom and cream of celery soups are also a necessitiy in my pantry also. Somehow, last minute ideas on what to fix for dinner, can come together with a leftover and a can of soup.

  4. We BBQ'd steak, potatoes n mushrooms n onions, all on BBQ, so tonight's leftovers will be fried up in pan with fresh veggies - SLURP! I also love cream of mushroom n celery soups, can also be added to browned meat pan and make excellent gravy for fast addition to meals.

  5. I'm pretty good at using the left-overs in other dishes, the trouble is they are never the same twice!

  6. We've gotten good at portion sizes for two, so there is rarely leftovers. Except for leftover homemade pizza - always better the second day!

  7. Left overs are my favorite kind of food. I'm an expert re-heater, too. I guess my favorite second-day dinner is pasta.

  9. I generally send leftovers with hubby to work for his lunch. Because of that we don't eat leftovers much for dinner. There are a few leftovers I tend to save for myself, mainly eggrolls. When I make eggrolls they are so much better the next day for breakfast, cold, right out of the fridge. Hubby never even gets a chance.

  11. I like to make family size, then save leftovers, so we don't have to cook every day. More time for writing.

  12. Cream of mushroom soup can do anything... Well, almost anything. hehe Leftovers are good. I'm single so they can fulfill at least 3-4 dinners a week. Nice.

  13. It depends on the left-over. Sometimes it is welcome, and sometimes it cannot be disguised.

  14. If we have a meat and potatoes meal one night, we'll usually do the salad with lots of meat the next day.

  15. *All of them*- leftovers are the best, because as the family's only cook I enjoy my cooking after I'd forgotten how it was to make it :)

  16. Usually we buy just enough for the two of us. But a large piece of fried salmon can be enough for a couple of salmons salad or salmon melt sandwiches the next day.

  17. Yesterday's turkey meatballs on pasta became meatball subs today. I usually make one big meal on Sunday, that covers an additional day or two over the week...revised somewhat, of course.

  18. Tonight I had chicken, potatoes, and carrots — all srevotfel. But there was freshly-made soup at noon, and there is enough soup that it will last for several.

    Keep on kookin', Karen.

  20. I take care of the leftovers in our house. Nobody else ever seems that interested in them, but I can eat them for days...
