Large Order of Pancakes


Weekends at our home meant dad making pancakes from scratch. Our boys usually had friends over for game nights on Friday, and Saturday morning there would be a bunch of neighborhood boys enjoying pancakes. This recipe makes a lot!

Large Order of Pancakes
Ingredients:
4 cups flour
2 tablespoons baking powder
½ teaspoon baking soda (for Buttermilk Pancakes)
1 teaspoon salt
4 eggs
4 cups milk (for Buttermilk Pancakes use sour milk, buttermilk or milk with 1 teaspoon lemon juice added)
½ cup oil

Directions:
Stir together the flour, sugar, baking powder, baking soda and salt. Separate egg whites and beat whites until fluffy. Combine egg yolks, milk and oil. Stir into dry ingredients just until blended. Fold in egg whites to final batter, leaving a few fluffs.
For pancakes, cook on hot, greased griddle or frying pan, turning when the sides dry out and center bubbles begin to pop. For waffles, cook in waffle-maker. Serves six to eight.

Home-made Maple Syrup
Ingredients:
1 cup water
½ cup white sugar
2 cups brown sugar
2 tablespoons maple-flavored extract

Directions:
Bring the water, white sugar, and brown sugar to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and stir in the maple extract. Simmer three minutes longer.

  1. Dear Karen - Now you have hit home with me - Saturday morning growing up, we had mounds and mounds of pancakes warming in the oven, syrup, molasses and sausages/Canadian Bacon. This was just how Saturday mornings were and I remember them with great fondness. I like your recipe for home-made maple syrup too :) Have a wonderful weekend.

    1. SaucyKod, Um yum, that sounds like the kind of breakfasts we'd serve our kids on a Saturday where we had a whole lot of outdoor work waiting. They'd enjoy the breakfast and know what was coming-- a job chart!

  2. My dad was in charge of pancakes in our house and he often told us about a time when he'd been a short-order cook and had a rawther large man as a regular customer - on his last shift he made this man a HUGE pancake that took a pound of butter on top and a cup of syrup. Or so he told us ...

    1. Jan, I had my husband sign in and read your comment. I said, "You've eaten a pound of butter on a huge mound of pancakes before." And he said, "A stick maybe but not a pound. A stick is 1/4 a lb." Haha, still a lot!

  5. The syrup recipe is the best! I made the mistake of looking at the ingredients on a bottle of, ahem, maple syrup and found strange and unusual food stuffs listed there. I started making my own too.

  9. Such a basic and satisfying thing, American-style pancakes. I didn't grow up with these for breakfast, and yet as soon as I had my first batch pancakes just "made sense."
    I like the simplicity of your recipe^ too.

  11. I saw the word pancakes and couldn't click fast enough to get over here. :-) Terry and I love pancakes. We go out every Sunday morning to our favorite restaurant to get this one HUGE pancake that we split. I am just waiting for him to wake up so we can get going right now! ha. I am in need of a good recipe that we can make at home so thank you!!

  13. Your post reminded me of my brothers. During the summer our grandmother, who lived with us, made pancakes for breakfast many mornings. More than once the boys proudly announced they'd eaten 17-20 pancakes, each. I can't eat pancakes, but your syrup recipe looks scrumptious. I'll be buying me some maple extract to make the syrup. Thanks.

  14. Not only on Saturday mornings do we have pancakes, but sometimes during the week we will have Breakfast for Dinner, and pancakes and sausage are family favorites!

  17. Hilary you are probably talking about what they call crepes over here. That's basically the only time we ever eat them too. Crepes that is.
