Oven-baked Fries


Moving down the alphabet in my theme of Recipes from A to Z, we have a simple potato dish that satisfies the craving for French Fries in a much more wholesome, and easier way-- without the frying!

Oven-Baked Fries

When the baking potatoes have sprouted, dried out a little and developed spots, they are no longer suitable for baking. That’s when this recipe comes in handy. Waste not want not!

Ingredients:
3 large baking potatoes or sweet potatoes
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon salt
¼ teaspoon pepper

Directions:
Preheat oven to 400 degrees. Spray cookie sheet with non-stick spray. Wash and peel baking potatoes. Cut into halves, then fourths, then eighths. Cut out any brown spots or discoloring. Lay out on cookie sheet. Sprinkle olive oil over all, then paprika, salt and pepper.

Place in 400 degree oven and bake for thirty minutes. Pull out and turn each piece. Return to oven and bake an additional fifteen minutes. Serves four.

The ones pictured were made using russet potatoes and sweet potatoes.

  3. I enjoy french fries and baked potatoes. Making my own is a thought that seldom comes to mind and I purchase potatoes all the time. Thanks for the reminder! Looking good!

  6. These certainly sound more healthy than the fried version. Of course I'd probably salt them so much that I'd diminish any healthful gain I'd achieved. Good stuff though.

  13. I'm going to have to try this one. I wonder if I could use the olive oil spray instead of sprinkling the olive oil over the fries?

    1. Liz, Pretty sure that would work as well, as long as they don't dry out. That'd be the main thing to watch.

  17. Hi Karen .. such a great idea .. and mixing the potatoes - I love chips ... but not too often!

    Good to have you remind us to use everything .. I don't throw food away ... I use it somehow .. fruit in salads ... etc etc .. waste not want not ...
